Two families. Two crafts. One bite.
Aurore Bites began with a simple story: two families bound by love of sweet things.
On one side, a line of Lebanese pastry chefs. A grandfather with his hands in the dough, a father who took up the torch. On the other, a family of chocolatiers. Between them, one obvious truth: pleasure gets passed down, generation to generation, one bite at a time.
The Spark
The idea was born on a Barcelona rooftop, between the beach and the Sagrada Família. A simple conversation between two people who love good food: what is we rethought the date? An elegant, modern, and an indulgent bite.
That seed travelled with us to Paris. Here against the richness of the French pastries, the seed found its ground. Parisian precision, Middle Eastern generosity, and chocolate as the link: Aurore Bites was born!
The Medjool date, at the heart of everything
We work exclusively with Medjool dates, chosen for their soft, generous flesh and naturally caramelized taste.
Paired with chocolate, it strikes a rare balance: the sweetness of one tempers the intensity of the other, opening an endless playground of textures and flavors. Every bite is meant to surprise, to be generous, and to be shared.
Built at home, bite after bite
Aurore Bites didn't start in an office. It was built in our kitchen, over lunches with people close to our hearts, honest feedbacks, and continuous recipe adjustments. Our first supporters weren't investors. They were our friends, sitting at our table, telling us their opinions.
That is the standard, intimate and sincere, that we put into every creation.
Why "Aurore"?
Aurore means dawn in French. We chose the name because this began in one of the hardest chapters in our lives, a long transition where the way forward was anything but clear. We poured everything we had into it: our energy, our late nights, and our hope. In a city where so many people arrive to start over, building our own first light felt exactly right. We look after Aurore Bites the way you look after something newly born, with patience, attention and a great deal of care. That care is in every bite.
And tomorrow?
Today, we are sharing a new way to enjoy dates, here in France, and starting with Paris. Tomorrow, we will take it across Europe.
But our ambitions will stay the same: to offer a bite that is refined, generous, and easy to share.
